Baking & Cooking Gluten Free with “Pulses” (aka “legumes”)

So my Mom suggested a few months back that I subscribe to a newsletter from registered dietician/gluten-free guru Shelley Case, which I now receive monthly. Every month she rounds up newsworthy items, recipes…all kinds of great gluten-free information! (If you’re not already subscribed I highly suggest it!)

I was HAPPILY surprised when in this month’s email she said that she and Carol Fenster had worked with “Pulse Canada” to create this booklet Pulses and the Gluten Free Diet which is free to download (or free to order a hard copy too – just fill out your information here! The recipes look really good and it also has tips about baking with bean flours (especially about measuring – things I didn’t know!), storing & cooking legumes properly and the health benefits of incorporating more legumes (which are naturally gluten-free) into your diet!

Now I like anything free, and especially when it’s useful. And the recipes look *good* (not all dairy free but hey – I am used to adjusting!) I love the creative use of pulse flours in breads…and not just chickpea flour! So now I have to track down all these pea/bean flours somewhere around here…hmm…

Let me know which recipe you want to try first! The pumpernickel bread recipe on page 23 is making me drool…mmhmm…
