Steffy’s Gluten Free Chicken Strips of Incredible Yumminess (and Stefan’s “Dee Friendly” Gluten Free and Dairy Free Wing Sauce)

OK so I used to be somewhat of a chicken strips/nuggets fiend in my previous gluten-ful life. Whenever we went to a pub, or really anywhere that had chicken strips on the menu, I would either order them or be sorely tempted to (mmhmm!). When I went gluten-free of course, they were no longer an option. This made for a very sad Dee.

So one day Stefan made me these awesome gluten-free, delicious, baked chicken strips that really really REALLY kick a whole lotta butt. And healthily!

So this is a basic 3-bowl breading recipe with delicious flavours added to each step (why not?) substituting GF flours for wheat flour and gluten-free bread crumbs for normal breadcrumbs. (But Dee, where do you buy gluten-free breadcrumbs??” you ask? Well…you don’t. You *make* them. But it’s super simple I’ll put my instructions for making the easiest breadcrumbs in my next post!)

I’m also including a recipe for Stefan’s super simple hot wing sauce that is gluten, dairy & soy free and DELICIOUS. (We haven’t been able to find a good “wing” style sauce that is free of all three of those ingredients so Stefan just made one up! Seriously – look at the label next time you’re looking at wing/bbq sauce. Full of wheat and soy. *sad face*) This sauce is amazing and it only requires 3 ingredients & a small sauce-pan, takes literally 3 minutes and it is the perfect dipping sauce for the chicken strips!

OK so onto the chicken! This recipe is infinitely flexible, and Stefan really just pours spices and stuff into bowls and apparently “measuring everything out” is “for suckas” or something (I was trying to watch & figure out what he was adding so I could share it with you,  and I kept interrupting his cooking…which he handled with infinite grace & patience! *hehe*) So please feel free to revise and add and subtract and experiment! This is our current incarnation that we’re really enjoying.
And of course if you’re more of a “nugget” person, feel free to cut up the chicken into smaller pieces. Or make little heart-shaped nuggets. Or diamonds. Or whatever makes you giggly and excited to eat!

Steffy’s Gluten-Free Chicken Strips of Incredible Yumminess

  • 2 boneless, skinless chicken breasts (or however many you want to make! We find that 2 is enough for 2 people)
  • 1/3 cup sorghum flour
  • 1 1/2 tsps sea salt
  • 1/2 tsp freshly ground black pepper
  • 1/4 – 1/2 tsp cayenne pepper
  • 1 1/2  tsp curry powder
  • 2 eggs, whisked lightly
  • 1 tsp grainy mustard (we like grainy German mustard but whatever your preference!)
  • 1 cup gluten-free breadcrumbs
  • 1 1/2 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp 1/2 dried parsley
  • 2 tsp red chili flakes
  1. Preheat oven to 350 degrees
  2. Cut chicken breasts into whatever size pieces you want (nuggets or strips, chunks, etc.)
  3. Put out 3 bowls on your counter for the breading process:

    BOWL 1: Flour, salt, peppers & curry powder together
    BOWL 2: Eggs, lightly beaten. Stir in grainy mustard.
    BOWL 3: Breadcrumbs. Garlic powder, onion powder, parsley and chili flakes.
  4. Dredge chicken in BOWL 1, dip in BOWL 2, then put in BOWL 3 and make sure thoroughly coated with breadcrumbs! Then place on a cookie sheet.
    Repeat until all chicken is breaded!

    NOW the trick to not breading your fingers while you do this is to use separate hands for the wet and dry ingredients. So it would be something like this:

    Using right hand, pick up chicken piece.
    Dredge chicken in flour in BOWL 1 using right hand to turn over to ensure it is fully coated in flour.
    Using right hand again, place floured chicken into BOWL 2 (without getting egg on your right hand).
    Now we switch to the left hand! Turn chicken over (so fully coated with egg) with left hand. (It’s okay if your hand gets a bit eggy.)
    Remove flour/egg covered chicken from bowl with left hand and place in BOWL 3.
    Now we switch to right hand again!
    In breadcrumbs, flip chicken over with right hand ensuring it is fully coated!
    TADA no breaded fingers that are like, 5 times the size of a normal finger! 😉

  5. Bake chicken for 10 minutes on each side in the oven!

And because I love my readers, here is the perfect dipping sauce for this delicious chicken!

Stefan’s “Dee Friendly” Wing Sauce

  • 2 tbsp Earth’s Balance Soy-Free Spread
  • 2 tbsp ketchup
  • 2 tbsp Frank’s red hot sauce
  1. Melt butter.
  2. Add hot sauce & ketchup. Whisk.
  3. Whisk over medium-high heat until bubbling.
  4. Let warm up for about 1-2 minutes!
  5. Adjust to taste.
  6. Serve with chicken nuggies!

    I don’t mean to be difficult, but butter is dairy. I am looking for new gluten free soy free variations to try and your chicken coating looks worth a try. Thanks!

    Sorry it shouldn’t have been listed as butter but instead Earth’s Balance which is a dairy free spread! (and they have a soy-free variety!)
