Hearty Tomato, Sausage and Bean Soup

My Grandma Carole has been ordering me a Canadian Living subscription for the past few years – and I have to say they have some mouthwatering cover recipe photos! When I’m waiting in line at the grocery store, I’m totally like “I MUST BUY/EAT THIS” and Stef reminds me that this issue is sitting at home on the bar (riiiiight!)

So this month, the cover picture was a soup. A delicious meaty, vegetable filled tomato based soup that looked totally tantalizing!

Here is the only picture I could find online. Sadly it is small. But you get the idea!! Mhmm!

So this is another one of the soups that I made for my Dad on the weekend. Now for gluten free and/or other dietary restricted individuals – BE CAREFUL with the sausages you buy! Many are filled with dairy, soy, gluten…all kinds of crap. If you’re not sure  – ask your butcher. If the butcher is not sure – go somewhere else. So not worth getting gluten-ed! I found some spicy italian sausages at our local grocery store Metro in the meat fridge (labelled “Traditionally Raised”) that had the following ingredients: Pork, water, spices. (Hurray!)

Safe sausages in hand I also made sure to grab a bunch of fresh oregano. If you can – please please PLEASE pick up the fresh herb. It is *so* much better and much less bitter than the dry and it really gives the soup an incredible flavour!

So here is the recipe from the Canadian Living Kitchens – they really do “Test Until Perfect” – I very rarely have any problems with their recipes! I made a few substitutions including changing the oil, I used one jalapeno pepper (not sure what “green hot pepper” they were talking about), I doubled the garlic, I used agave nectar (it is better for my diabetic Dad!), and used my own homemade turkey broth (lower sodium than store bought – better for his high blood pressure!). I also only ever add salt/pepper to taste (probably more pepper than 1/4 tsp! *lol*)

Also again, I have no fancy dutch oven as per the instructions (although I’m putting one on the wedding registry!) – a plain old soup pot worked for me!

So my variation on the recipe is below! My Dad and I both are really enjoying this soup! 🙂

Hearty Tomato, Sausage and Bean Soup

  • 4 tsp olive/coconut/grapeseed oil
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 1 rib celery, finely chopped
  • 4 cloves garlic, minced
  • 1 jalepeno pepper, destemmed, deseeded and cut into 4 large pieces (so they are easy to fish out at the end. You could mince & leave it in if you prefer a spicier soup!)
  • 2 Italian sausages, casings removed
  • 2 cans (28 oz/796 mL each) whole tomatoes (I would recommend cutting tomatoes before adding to soup *or* using diced tomatoes!)
  • 1 can (19 oz/540 mL) navy beans, drained and rinsed
  • 1 cup broth (homemade is best!)
  • 1 cup water
  • 1/3 cup chopped fresh oregano
  • 1 tsp agave nectar
  • Sea salt and freshly ground black pepper to taste
  1. Heat oil in soup pot over medium heat. Add in onion, carrot, celery, garlic, chili pepper, salt and pepper and stirring occasionally, cook until softened, about 6 minutes.
  2. Increase heat to medium-high; add sausages and sauté for 5 minutes, breaking up with spoon.
  3. Stir in tomatoes, breaking up with spoon.
  4. Add beans, chicken broth, water, oregano and sugar; bring to boil.
  5. Reduce heat and simmer until slightly thickened, 15 to 20 minutes.
  6. Discard hot pepper.
  7. EAT!

This is a lovely flavourful soup! I think you could even put *two* cans of beans in, or maybe one can of black beans and one of white beans? Or maybe a can of pinto beans? Ah… I love these kinds of dilemmas!
